Hansells Yoghurt's Potato Salad

A great side dish the whole family will love!

The beloved Potato Salad made a little healthier by substituting the mayonnaise with our Lite Yoghurt! 

Serves 4-6

Ingredients: 

4 - 5 medium size potatoes, chopped to bite-size chuncks

150 grams Classic Unsweetened or Lite Unsweetened Greek Style Yoghurt 

2 tbsp chives, chopped 

1-2 cloves of garlic, finely chopped or pressed 

Salt and pepper, to taste

 

Method:

1.Place the potatoes in a pan and cover with water. Bring to a boil and simmer for 8-10 minutes until the chunks are tender. Drain them and leave to cool.

2. Place the potatoes in a bowl with the yoghurt, garlic, 1 tbsp of chives, salt and pepper. Stir it all together until combined. Add more seasoning if needed. 

3. Cover the bowl and refrigerate for 20-30 minutes before serving. Just before serving, sprinkle the remaining tbsp of chives on top of the potatoes.
