Fluffy Pancakes with Greek Yoghurt

Pancakes are a must at any weekend brunch! Make them even more tasty and fluffy by adding our Thick & Creamy Greek Yoghurt!

Serves 4

Ingredients:

1 1/2 cups of milk
2 large eggs
2 tsp vanilla extract

1 cup whole-wheat flour

1 cup all purpose flour

4 tsp baking powder

1/4 tsp salt

1 tbsp granulated sugar

 1/2 -1 cup Thick & Creamy Unsweetened Greek Style Yoghurt

Berries & some extra yoghurt for serving

Method:

In a large bowl, mix together all the dry ingredients. In a smaller bowl, whisk together milk, eggs and the vanilla extract. 

Pour the liquid mixture into the dry ingredients and stir until just combined. Stir in the yoghurt. 

Heat a nonstick skillet over medium heat and grease it with butter or your preferred cooking spray. Spoon 1/4 cup of batter onto the pan for each pancake and cook until bubbles form. Flip the pancakes and cook for another minute or so. 

Top the pancakes with a dash of yoghurt and berries, and enjoy!
